"Yummy! This is very close to what you get at Chevy's or Chi-Chi's. This is like a very moist cornbread flecked with corn kernels. Comes together in a snap and makes a great side. Guaranteed kid pleaser! This dish should be served hot or warm, and reheats nicely in the microwave."

"I created this dish to use the broccoli I had bought for the first time in my life (used to hate the stuff!) and to fit my parents' low carb diet. The fastest way to pre-cook the broccoli, chicken and bacon is by using a combination of the microwave and stovetop. "Extremely popular at Carnival time. It can be bought piping hot from street vendors and is served at most carnival fêtes. West Indian corn is more starchy and less sweet than the North American variety but I don't imagine that other varieties of corn would detract from the flavour of this dish. Goes a lot faster if done in a pressure coooker...."
