"I found this recipe in he Spring 2009 edition of Cooking for 2. I made a couple of changes and really loved that the recipe makes 4 pot pies--2 for now and 2 for later. Very easy and economical."

"This is a very modified version of Super Easy Chicken Manicotti. I use banquet chicken tenders because they are longer than the other brands and I put in one per manicotti and I had two leftover. This will make 5-6 8"x8" pans of manicotti depending on how many you put in each pan. I make five."

"I call this freezer cheesy potatoes because I always make a double recipe and before baking, freeze half of it for another time. I use foil pans and cover with aluminum foil. I thaw in the refrigerator before baking as instructed. They turn out great."
