"I made these super easy cupcakes for my daughter's breakfast birthday party. These would be perfect for a summer gathering, kid's party, class treat, etc!! You can adjust the quantity to yield as many as you need. I made these with lemon frosting but you could use a white frosting and tint it yellow."

"These cupcakes are a form of Red Velvet that were made with marshmallow fondant in order to kick off a new internal contest.
They were adorable and not too hard, just took some time. Would be great for a kid's party, or a summer barbeque!"

"this is a fun fall project! You can of course roast your beets first; I took the lazy way out.
If you want to use roasted beet, do them in the microwave.. Wear plastic gloves while working with the beets."
