"Made in the spring when both morel mushrooms and vidalia onions are in season (and, sometimes, the rare heirloom tomato such as a Cherokee Purple), this dish can be a nice change from regular beef stroganoff.

"I adapted this from a recipe I saw at Mediterranean Cooking in Alaska. I had been looking for ideas for red cabbage with mushrooms since I had both on hand. I was intrigued by their recipe, and adapted this one out of that, with some seasoning changes.

"When I attended the University of Michigan, one of my favorite places to eat was the Fleetwood Diner in downtown Ann Arbor. This tiny diner, no more than an antique boxcar, is open 24 hours a day and draws a diverse group of people.
Many a night my friends and I enjoyed some great people watching and satisfying simple food.
