"As I have stated before I mostly gather, modify and review recipes instead of designing them and this is one of those recipes. The recipe came from LeighDear at LowCarbFriends.com and is one I did not modify at all. It is a REALLY good dish that my family loves and has been getting great reviews. Thanks for the great recipe Leigh!"

"This is one of my favorites on the South Beach diet. I usually eat this for breakfast or for a snack; it really satisfies my "sweet tooth". For those on South Beach, count the pecans as part of your daily nut allowance."

"I found this recipe on a low-carb forum when Googling different low-carb websites--it sounds crazy, but the end result is amazing! To quote the original post:
"This makes a wonderful hamburger bun, it tastes like a whole wheat bun. It's very sturdy and holds up well with all the juiciness of a hamburger with all the fixings."

"I've read through a lot of recipes to come up with my version of this quiche. I wanted to make one that is crustless and low carb, and this one is a WINNER! But once I start eating it, I just don't want to stop! I thought I could make it ahead so I could have a quick breakfast on work mornings, but this rarely lasts out the day it was made!..."

"This is my very favorite low carb recipe! It's so easy to prepare, and it's done in only 2 minutes in the microwave. The best part is that it only amounts to 1 carb per slice!!! There isn't a trace of corn in the recipe, but try it; it really does taste like cornbread!"
