"This is a copycat recipe I found for this amazing rice, it works perfectly with a nice savory pulled pork that I use for making burritos. But it really is good enough to have on it's own. *edit* I will have to revisit this recipe soon and come up with more precise measurements and possibly using more generic rice."

"Posted by request, this came from TSR. I haven't actually tried it myself, nor have I ever been to a Baja Fresh restaurant, but I've gotten pretty good results with many other TSR recipes. "This came from the Los Angeles Times via Liz at Recipegoldmine.com. It was a stove top soup, but the closest I've yet found to Anderson's which is a tradition in California. I modified it just a bit for the crock pot and made it a hair thicker to suit our tastes. You can also add bacon, ham, or ham hocks to enhance the flavor a bit."
