"Tried and true. I used to make this all the time and recently I realized I hadn't made it in a while, so I decided to make it. My daughter ooo'd and aww'd and asked what was wrong with me because I hadn't made it in so long. She claimed it was her favorite dish I've made. I think I found this recipe in Good Housekeeping magazine,..."

"That's right now you can make barbacoa as good as Chipotle's at home! Perfecting this recipe started as a bet... while my husband Scott and his good friend Steve were enjoying one of their many grad school barbacoa lunches from Chipotle, Steve made the comment, "I don't think even Jan could make it this good." Oh, the challenge..."

"My recipe for a Mexican-inspired tender-chunk chicken pie with a cornbread crust is a bit labor-intensive, but so worth it. This is kid-friendly as far as its heat -- for a spicier pie simply replace a portion of the green bell peppers with jalapeno or serrano peppers."

"My recipe for a delicious fried chicken breaded in savory Mexican seasonings. PLEASE NOTE: The Nutritional Information listing here is inaccurate -- since only a fraction of flour and salt actually end up in the finished product. So be aware -- the suggested sodium, sugar, carbohydrate and calorie levels are ridiculously exaggerated!"

"These are savory, spicy burgers that are made even tastier with spicy mayo, avocado slices, a fried egg and pico de gallo. Add cheese if you like, or maybe even bacon. I'm sure these would taste great if cooked on a grill, but I pan-fry them."

"These pork chimichangas are delicious and easy to make. I have been perfecting this recipe for the past 15 years. They are baked, instead of deep fried. This recipe makes 10 entree size or 18 lunch sized chimis. They are also an economical choice with only 7 common ingredients. You will love the flavor of these."

"One of my all time favorite Mexican dishes is Pozole. After trying out a few recipes and changing it up a bit I think I have a keeper. Make sure you give yourself plenty of time for prepping and allowing the stew to simmer for a couple of hours. You and your guests will NOT be disappointed."

"A traditional, favorite recipe. Uses a cut-up chicken, skin on. To save fat, you could use skinless, but highly recommend using bone in for flavor. It is the most authentic to use skin on and bone in."
