"These are decadent and wonderful and give a whole new meaning to "grilled cheese". Be sure to use a very good sourdough and the freshest of mushrooms. Note: This is a difficult sandwich to turn in the pan, but definitely worth the hassle.

"I went to Makros (similar to Costco) today and got a huge box of chicken breasts. I was putting them into freezer bag by pairs for future meals (there are only two of us) and I had one 'odd' breast left over. So, I made these open face sandwiches for lunch. It could serve one person for lunch or two for a snack."

"Also known as Tuscan Portobello Melt.This winning recipe (combined with Smokin' Fire Roasted Red Pepper Soup) was Betty Fraser's entry for the Top Chef episode where the competitors had to present a "comfort food".
