"I roasted a leg of lamb recently (with Ras el Hanout Spice Mix) and since I was the only one eating it, I had a bit leftover. I came across this recipe in a cookbook (by James Villas) and knew I had to try it. It tasted soooo good I just had to share! (You can substitute any other leftover cooked meat: beef, chicken, etc. for the lamb if desired.)"

"It seems like a lot of greens but they cook down to almost nothing.And if you want you can replace the dandelion with spinach. I use hot sausage which gives this a real kick, but if you rather go for mild or just use chopped beef."

"A little different. If you can't get goat cheese curds - and they ARE pretty esoteric - regular cheese curds are fine. Cheese curds are also known as "Squeaky" cheese. If you can't find them, well, diced mild Cheddar will have to do."
