"Spanikopita is Greek for "Spinach pie".
Do NOT stress over the filo dough. Think of that aspect like pie dough. You're making a top layer and a bottom layer. Don't worry about splits and such, or complicated applications of layer of this, layer of that. It's not important in this recipe.

"A delicious mixture of eggs, vegetables and sausage. This dish can be prepared for any time of day - we've enjoyed it for breakfast and for dinner, so it's probably just as satisfying for lunch! I have also presented this dish at employee gatherings and no matter how much I bring, it ALWAYS disappears!"

"This is a wonderful, cheesy, melt-in-your-mouth dish that is a favorite of mine now, and when I was growing up. You don't have to serve it with sour cream, but I always do. It is best to my taste, surprisingly, when you stuff them with the swiss cheese. Adds some tanginess to it. I hope that you enjoy these as much as I do!"
