    Kitchen Dictionary: smelt

    A small (4-7 inch) fish with a translucent silver-green back shading into shimmering silver sides and belly. Its flesh is delicate, rich, oily and mild-flavored. There are many varieties including the rainbow smelt, whitebait and eulachon or candlefish. The smelt is anadromous, meaning it migrates from its North American saltwater habitat to spawn in fresh water.
