    Kitchen Dictionary: farmer cheese

    An Old World style, fresh, pressed curd cheese made from cultured pasteurized Grade A skim milk, cream and salt. It is called by different names all across the world, but might more familiarly be known as dry curd cottage cheese. Farmer Cheese has a mild, delicate milk taste, and a texture that is moist, yet dry enough to be sliced. It is a very low lactose cheese. Farmer cheese may be used in place of ricotta in lasagna or stuffed shells, or on pizza-basically anywhere in a recipe where a white cheese is called for. Farmer Cheese can also be used in cheese cakes, in omelets, in blintzes, crumbled over salads, sliced in sandwiches, or eaten alone.
