    These seafood enchiladas are a wonderful change from chicken, but if desired shredded cooked chicken may be substituted for the seafood...these are delicious!*** Note: if desired the tortillas may be prepared in advance, then refrigerated or frozen for later (these are great to have all ready prepared in your freezer)...when ready to use, just prepare the cream sauce, and bake as directed... if the tortillas are frozen, defrost first.
