    From Martha Rose Shulman's fabulous cookbook. I used a combination of red beets and golden beets. Instead of steaming the beets I roasted them in foil for about 1 hour @ 400º. They were roasted separately so the red beets wouldn't bleed onto the golden beets. Please do not prepare this salad unless you plan to add the orange blossom water.
