I never thought I'd be able to tell anyone they could have chocolate snack cake on Phase 1 of the South Beach diet - but here it is! This HIGH fiber sugar-free chocolate snack cake is suitable for Phase 1 of the South Beach diet and many other low carb plans. For South Beach, the cocoa in these count as about half of your 75 calorie "Sweet Treat" allowance and the ground almonds count as your allowance of nuts. These are fairly moist so I do not use a frosting (it wouldn't be allowed on phase 1 anyway). And yes, I really do make it in the microwave in a flash! It's perfect for saving you from sudden chocolate cravings. We find that these are really filling so you aren't hungry again right away (must be all the fiber). **NOTE** Fibersure is a product made by Metamucil (may also be called Metamucil Clear & Natural) that is flavourless and has 5 calories and 3 grams of fiber per teaspoon according to the label. It is not a significant source of sugar or fat. This recipe may work with similar products by other manufacturers, but to date this is the only one I've tried it with. Since Zaar doesn't recognize Fibersure it doesn't get counted in the nutritional analysis, this will add an additional 15 calories and 9 grams of fiber to each of the two snack cakes.
