This dish comes from 'What's Cooking Vegetarian' by Jenny Stacey. It serves 4 as a side. It is very versatile & can be made with a wide selection of vegetables. We made it with basmati rice because our brown had run out & included mushrooms, red capsicum & used fresh oregano, parsley & basil for the mixed herbs.
The pics are of the recipe with twice the rice and cheese, more corn with the addition of mushrooms & yellow capsicum, that we enjoyed as a main dish.
