A lovely dish that will leave your tastebuds begging for more! Just the right amount of heat without being overpowering. This recipe came from The New Vegan Cookbook (page 57). I highly suggest not adding any salt/pepper to the mixture in the pan that is cooked for 15 minutes. Salting/peppering the eggplant when it's in the oven plus salting/peppering the eggplant shells made the dish plenty salty and peppery to me! Better to add too little and just salt it at the table than for the dish to be too salty!
