    When cooked properly Brussels Sprouts have a sweet and nutty flavor with a slight hint of bitterness. This quick and easy recipe offsets that slight bitterness with a sweet maple syrup pan sauce. The recipe can be easily halved. I adapted this from Julie Taras of Little Giant restaurant in New York City.

    Canadian bacon is a lean, smoked meat that is more similiar to ham than to bacon. It comes from the loin cut. A buttery California Chardonnay with an oaky smokiness will echo the richness of the cream and Cheddar cheese and the saltiness of the bacon here. Try the 2000 Acacia Carneros or the 2000 Chateau St. Jean Sonoma County.

    Great liqueur recipe using maple syrup that is excellent in BBQ sauces and marinades. Very unique taste that is good on its own but wonderful in baked goods. Simply substitute for Maple extract.....The recipe is ready for use after 2 weeks. Store the liqueur in the refrigerator.

    I am not exactly sure of the origins of this drink. The recipe was given to me by a group of Canadians while I was bartending. Canadian visitors often asked for the drink and it became quite popular one summer with our locals. I have been told the recipe is also called a "Canadian Ski Slope" and have seen it called a "Canadian Hangover", but the drink does not warrant the latter title as it rarely produces hangovers.... so the title "Canadian Slipper" from my worn, tattered and badly stained bar index card file will remain.....

    I was just recently told that Apple Pie is a Canadian "invention"... in my search to preserve part of my American dream of baseball and apple pie... I found this recipe that is truly Canadian. In fact, I can now live in denial as my search went no further than the fritter as I abandoned all research to whip these up... These are so delicious and so delicate - just in time for apple season too..... I raise my glass of Fosters (Australian for Canadian Beer) in thanks and gratitude!

    This is one of the best whole chickens I have ever cooked. The cheese stuffing is tucked under the breast skin of the chicken to give added flavor and moistness to the meat. Impressive looking and awesome tasting….what more could you ask for…..

    This recipe was prepared by Mario Martel with Carl Murray of L'Astral Restaurant in the Loews Le Concorde Hotel in Québec City. Don't overcook the salmon. Cooking it slightly rare will give it a softer, more tender texture.The salsa can be served warm or cold and used with any fish. If salmon is too expensive, simply replace it with halibut. The salmon tournedos are placed on wild rice and vegetables and served with salsa and green asparagus which can be stood up by fixing them with a small skewer.
