This is easily made vegetarian or vegan by substituting Morningstar Farms Veggie Crumbles for the beef & using soy cheese. Feel free to edit the spices to your own taste. Sometimes a dash of red pepper is nice. ;) I made this up & Mom wants it on paper for her Cardiac Rehab Cookbook & Wilderness Advanced Life Support course menu. Her ya go, Mom!!

No, not flan. This is flavored like Mexican hot chocolate! The addition of cream cheese makes it even richer & creamier. **HINT: my stand mixer did not combine the ingredients enough for my liking. I recommend a whisk or hand held electric mixer where you have more control.** Using cream cheese makes it a bit thicker and will hold up the mini chocolate bits. When they melt they give a bit of a marbled effect. :) Developed for RSC#15. Enjoy!

In looking at mole recipes, there is always some part that I would change. So, I did some research, read loads of recipes, picked out the parts (ingredients & measurements) that I like best & created my own recipe! I found some shortcuts; the ingredient list is still typically long but there's nothing difficult to find . It's YUMMY, imho. ;) It's nice & spicy & there's heat but it won't blow the back of your head off. Lovely texture. Great depth of flavor. It's also easy & doesn't take very long!

I made this up the other day when I had no idea what to make for dinner. I served it under poached eggs. My kids mentioned it would work wonderfully as a taco filling. There's probably several other uses, too! The ancho gives it a bit of heat without being overpowering.

I was craving Huevos Rancheros but didn't have the stuff. So I made this up. The kids loved it so I thought I'd get it submitted before I forgot what I did! We couldn't think of a name so I just named it after myself. ;) I think it would be a nice brunch dish. This of course can be modified to suit your own tastes. This was a bit zippy with only 1 jalapeno. I used preshredded mexican cheese but whatever makes you happiest will work just fine. I might add some hot sauce next time - jalapeno or chipotle.

I found this for the World Tour. This woman has a lot of great recipes: Patricia Wriedt - Mexico City - pwriedt@spin.com.mx and I must give her the credit! I altered her recipe just enough to be easier to read. She says, "Here are all the recipes I have write in English. I think some of them are not in correct English but I think the people understand this. Saludos, Patricia. " I did some research & found that cashews & pecans are native to Mexico so I think they would be good choices for '1/2c nuts'.

Don't know if it's 'correct' or authentic but it's good. Hubby had me make a batch to can. Of course, you can add as much or little chipotle as your palate desires. Next time, I plan to use prepared chili sauce instead of the ketchup.

A discovery for the World Tour 2005. This is another Patricia Wriedt recipe. Epazote is an herb that you may or may not have access to. As I understand it, if you don't have it, just leave it out. There's some very interesting reading about Epazote if you Google it. Happy cooking!
