    It's good!! Not really a recipe, more of an idea. I like eating these (on occasion) with lunch. They are extremely quick and easy to make. The natural cucumber flavor is promident with a hint of vinegary tang.

    Blini are thin buckwheat pancakes. Russian Blini are served with sour cream and caviar or smoked salmon. However, they also make a nice Hanukkah breakfast with some jam or pancake syrup on top. From the Jewish Holiday cookbook. The rising time is included in the cooking time.

    This is a delicious colourful chili with a perfect blend of many vegetables with tofu in a thick spicy tomato base. This original recipe came from Runner's World magazine, although I have altered it to suit my likings. Frying tofu gives it a more meat like texture. For those who like chili very spicy, more chili powder may be added.

    Very soft decadent, yet low-fat cupcakes. These do not contain egg and can easily be made vegan. Un-iced, they are still extremely good cake-like muffins. NOTE: these cupcakes had a VERY mild citrus flavour. I have since added orange zest to the recipe for a more prevalent citrusy flavour.

    This delicious chocolately fudge, has mashed potato in it!! My mom has made this many times when company came over, and not once has anyone guessed that mashed potatoes were in this fudge. We have often omitted the peanuts.
