    From The Best Recipes in the World by Mark Bittman. "One of the most basic, simple, and delicious bean dishes. These are great on their own but also fantastic as a side dish with grilled meats of any kind. As with all legumes, if you have a chance to soak the beans ahead of time, they will cook a little more quickly, but it isn't essential." Prep time does not include soaking time.

    Light and delicious soup. It's kind of a vege-chicken soup as written, but if you took out the chicken and made it with vegetable stock or even tomato juice, it would be completely vegetarian. In my opinion, it's kind of bland as written - I add 1/2 tsp salt, 1/2 tsp oregano, and 1/2 tsp minced garlic when I make it.

    Fast, and delicious! This Italian-inspired soup cooks up in a jiffy, and is very filling. Serve with warm, crusty bread and butter.

    It actually tastes like pizza! Kids love it, and it's a good way to hide veggies too. Feel free to add any leftover cooked veggies - green beans are great - or throw in some chopped tomatoes.

    A take on chicken cacciatore from the busy girl's kitchen. Use italian sausage, bratwurst, kielbasa, turkey sausage, or chicken sausage flavored with sundried tomatoes if you can find it. In my opinion, the last sausage listed is the tastiest (and healthiest) with this dish. I added zucchini and yellow summer squash because I had them, you can leave them out if you prefer. Maybe add mushrooms instead! Serve over pasta.
