    These muffins are a nice twist from plain bran muffins. Since they are garnished with either chopped apple or white chocolate chips they are quite visually pleasing. These muffins are not as sweet as some, which makes the bits of fruit stand out. Enjoy these muffins as is or with a little peanut butter, honey or jam. ------ Recipe created by me for RSC #9!

    How do you make pancakes nice and fluffy but still really moist? Add mashed potatoes! The orange maple syrup combines the flavours of orange, apricot and maple, to create a sweet, flavourful thin sauce.     Not only do the strawberry and orange pieces make this baked oatmeal taste wonderful, but they also stud the pale oatmeal with a wonderful deep red. My main complaint with baked oatmeal is the excess amount of sugar added, making it taste more like dessert. This oatmeal is only slightly sweet, with the option of adding additional honey to drizzle on top. The individual serving size is quite small (which allows one to enjoy the oatmeal with toast, fruit and milk for a complete, healthy breakfast) but the individual aspect also makes it quite pretty. These are perfect for kids to help make, and are a sweet treat. Use whatever kind of chocolate wafers you prefer.     This is a deliciously creamy yet low-fat potato salad. The french dressing plus the mayo and yogurt adds some tang and colour to the salad. I have never felt the need to add any salt to this recipe. Plan ahead, this salad needs 2x4 hours chill time. NOTE: If you choose to use the whole eggs instead of egg whites the fat content of this salad will increase. It is also nice to use the 3 or 4 egg whites and then use one sliced whole egg as a decorative topping.
