This is from Fast-Scratch Vegetarian by Land O' Lakes, and it was a staple during my veg days. It is quick and easy to throw together and quite a hearty meal! I usually make my own crust, and often make it much larger than 12 inch.

    Recipe #437078

I found this in Healthy Cooking magazine some time ago and am posting it for safekeeping. I have not tried it, so let me know what you think!

    Recipe #437075

I found this at whilst searching for new and interesting uses for walnuts. I can't wait to give it a try!! They also suggest that this mixture makes a great taco salad.

    Recipe #424626

Yes, I am adding YET ANOTHER veg chili to this site! I can't help myself; this recipe has become our favorite go-to chili recipe, and it has a few touches that make it stand out from the rest IMHO. If your family would prefer meat in their chili, I have had success subbing 1/2 lb ground meat in for one of the cans of beans. But do try it'll be amazed at how hearty and filling it is! Feel free to sub the bean types for what you have on hand--I always do! As the title suggests, this is from Cooking Light, September 2008.

    Recipe #414826

This is an experiment; DH and I couldn't choose between chicken pot pie or tortilla casserole so I decided to invoke both with a brand new recipe. If it is posted here you'll know we enjoyed it :). Credit is due to Chef #169430 for her Recipe #188754 #188754, which I have used here as the crust. I halved her recipe.

    Recipe #399510

This is an adaptation of a recipe found at I plan to make it tonight, so if this recipe goes public you'll know it was a good experience :).

    Recipe #379439

This is from Healthy Cooking, June 2008. Just something a little bit different from your typical enchilada. I enjoy the recipe as is, though for DH we have added chopped leftover turkey. I imagine that baby shrimp would be yummy in here as well if you wish to add meat. The magazine says you should get 8 enchiladas from this, but for me the filling was enough to make 10.

    Recipe #349845

A lightened-up version of a comfort food favorite! I haven't made it yet, but will soon! From the Hamilton, OH Journal News, recipe by Jeanne Jones.

    Recipe #332905

This is the result of a mad craving for green chile when I didn't have the time to make enchiladas or casserole. I must say this definitely sates the inner chile demon, or at least keeps it at bay for another day...

    Recipe #320916

I got this from a cracker box. I haven't made it yet, but how can you go wrong with chile LOL? Cooking time is chilling time.

    Recipe #316742

Haven't tried this yet...I just dreamed it up and want to keep it in a safe place until I do :).

    Recipe #306280

Found this at 3 Fat Great recipe, very filling with HUGE portions!! A great way to get your mexican fix without having to assemble burritos, enchiladas, what have you. Also a great way to use up leftover cottage cheese. I have used a drained can of corn in this recipe in lieu of the frozen--works just fine!

    Recipe #315115

These are an old stand-by that my family has used for years for a quick, filling, yummy meal.

    Recipe #274627

This is from my beloved Betty Crocker cookbook, and it is such a favorite that I want to share it with everybody! It's also a GREAT use for those tortilla chip bits at the bottom of the bag! I've "healthed it up" a bit, but you would never guess from the flavor and the servings are huge! The cookbook says this is 345 cals per serving, 13 g fat.

    Recipe #242480

My husband and I were feeling nostalgic for green chile (we used to live in NM), so we dug into the precious Hatch supply and this is what I came up with. If you can't get ahold of Hatch, try for the most flavorful green enchilada sauce you can find. If you can get Hatch--send some to me LOL! The steps look involved but really this takes no time at all.
