    This spicy hearty stew is great with fresh french bread. The spiciness in this recipe can be altered by either cutting the chiptole's up or leaving them whole. Prep time includes cooking the pureed vegetable broth.

    This recipe comes from The Blue Owl Restaurant and Bakery in historic Kimmswick, MO. My daughter named it "Football Soup" because we always make it when we have a crowd over watching the game after church! Incredibly easy, freezes beautifully, and my bean hating husband even loves it. I add an extra can of green chilies for more flavor. You can make it without the chicken for a cheaper meatless meal, and you can make it without the monterey jack cheese for a low-fat, less thickened soup (but the cheese adds a lot of flavor!)

    A yummy alternative to the traditional, full of spices and vegetables. You wont miss the beans, but if you feel so inclined, garbanzos straight from the can go nicely with this dish. I prefer to use a homemade taco seasoning mix, but use whatever's most convenient for you. I also make the boullion using water and store-bought granules (make 2 c.- it's close enough). The recipe states you should serve this with crusty bread, however, I cook up a pound of elbow macaroni and add to the bowls as I serve to make this a true kid pleaser.

    I adapted this recipe from a book called Pure Poultry. I wanted a soup that was hearty, yet still felt fairly light. This really fit the bill. The pesto really adds to the flavor of the final dish, so I highly recommend using it. Serve with a loaf of italian bread to soak up the remaining broth. If you have homemade chicken stock, use it here- the flavor really comes through. When you are prepping your ingredients, remember to cut them in small pieces, so they will fit on your spoon.

    I got this recipe from my mom, who in turn got it from a friend, who in turn got it from www.foodandwine.com. It is extremely flavorful!! It also freezes very well. You could use boneless, skinless chicken breast in lieu of the thighs and it would be just as wonderful.
