This delicious and decadent cake has a firm texture, closer to a bar/brownie. It was created for the Ready Set Cook #8 contest. To enjoy the full flavor of the spices and rum, make a day ahead and refrigerate overnight. Best served cold.

This recipe was created for the Ready Set Cook #8 contest. It's best to make this delicious sweet and spicy glaze ahead of time, and keep it refrigerated until needed. It will make about 1/2 cup. Because it's very hot and spicy, it doesn't take much to glaze the chicken breast. If you have some left over, it can be used like pepper jelly for other uses too. (I doubled the glaze recipe to keep on hand in the fridge.) Habaneros are delicious but extremely spicy. If you want to tone down the heat, use less habanero, or use a milder pepper. Also, use extreme care when mincing the habanero. I use a paper towel wrapped around my fingers, to prevent my fingers from coming in contact with it. If you get it on your fingers, and touch your eye - YOWSA!

This recipe was created for the Ready Set Cook #8 event. These make great appetizers, snacks, or a meal. You can make them as mild or as hot as you want depending on the type of peppers you use. Serve with fried plantains or a tropical fruit salad.

These delicious and tender cupcakes taste of spice, orange and coconut, and are topped with a creamy orange flavored frosting. Developed for RSC #9.------

    Recipe #211564

These are delicious served with Pina Colada Sauce (I use Julesong's Recipe#115156) or sweet and sour sauce. They make an excellent presentation by placing the skewers in a fresh pineapple wedge surrounded by dipping sauce and garnish. I have also made this using large shrimp and threading 2 or 3 shrimp on to the skewers.

I posted this recipe for ZWT3. Looks yummy, I can't wait to try it. Times do not include time to marinate overnight.

    Recipe #229632

I found this while looking for ZWT3 recipes. These are extremely spicy. You may want to adjust the amout of peppers or hot sauce to your own liking if you are not into extreme heat. I think this is goes well with my Recipe #233275.

    Recipe #229633

A lovely recipe from the Barefoot Contessa that is good for breakfast, snack, or dessert! This recipe is Southern and Caribbean because of the oranges! If you like, you may skip the step allowing the yogurt to drain and just add the rest of the ingredients!

    Recipe #227025

In honor of the Caribbean island of the month, here is a great taste of de islands! This makes much more barbecue sauce than you need for a single chicken. It keeps well in the refrigerator. Adapted from the Cookin' & Grillin'.

    Recipe #229143

An unusual and interesting change from the usual nuts and crackers! Adapted from Cooking With Too Hot Tamales cookbook. This fits into the Southern category because coconuts are grown in Florida and also the Mexican/TexMex category because the chili powder is used.

    Recipe #229145

A yummy recipe from the Caribbean island of Aruba. Traditionally cocada is served on broken bits of the coconut shell. I've included this in the southern category too, since coconut is grown and used in Florida!

    Recipe #229155

A yummy drink makiing good use of the mango! Adapted from Cooking With Too Hot Tamales cookbook. I have put this under Southwestern and Mexican catagories, but it also is very Southern and Carribean! Love that mango!

    Recipe #227359

A $400 winner in the tropical fruit category for Better Homes & Gardens, March 1997. Yum!

    Recipe #227388

Avocados add such flavor and color to a meal. This is yummy. Adopted from the Haas Avocado Board. Enjoy!

    Recipe #192543

Easy and so good, you can have it for dessert! Originally supposed to have come from Martha Stewart, but posted on the internet to go with Vietnam cuisine! This also fits in the Caribbean and Southern catagories!

    Recipe #193559

This is from Cooking with Onions, Favorite Onion Recipes! Great with steak and baked beans.

    Recipe #195441

Cayenne makes this spicy! I'm a wimp so use less. Serve it piping hot with thick slices of warm crusty bread. Adapted from Rebecca Field Jager in her cookbook How to Make !ove and Dinner at the Same Time.

    Recipe #195643

I haven't tried this yet, but am posting it here for safekeeping. I'm looking forward to trying it!

    Recipe #197112

Wonderful for a chilly evening, after a lovely dinner. Sit back and relax!

    Recipe #198751

A good recipe from Foodnetwork Specials Great Holiday Gifts. This is so pretty put in a basket with oranges, a tin of cinnamon, a bottle of maple syrup, orange extract and some muffins!
