This is a yummy variation on the classic kids' treat.
I like my rice krispie squares to be heavy on the mallow so if you prefer, feel free to add more rice krispies to the mix!
I don't have easy access to good maple syrup this side of the pond so please feel free to adjust that amount too- 2 tablespoons of the fake stuff I get here is about right but you may need less of the real thing!
If you want to make less, half of this recipe fits in a loaf tin beautifully.
I love this flavourful variation on the usual twice baked potatoes. It looks bright and colourful too. The pine nuts provide a lovely nuttiness and texture but they can be left out if they are not to your liking.
I came up with this while trying to find a really decadent coffee treat. The white chocolate and Baileys provide enough sweetness that you will not need any sugar! If you like your coffee strong, just add more instant coffee granules.

Thanks to a review, here is a suggestion if using a convection oven- cook for 40 minutes total, the first 15 mins at 350F and thereafter turn it up to 400F.
