This is a wonderfully filling soup that is a complete meal in one dish. If you use full fat italian sausage, you will need to drain the fat before adding the liquid ingredients or skim the fat from the soup as it simmers. This recipe is very suitable for Weight Watchers if you use very lean sausage and go easy on the tortellini.
This is always how I cook my zucchini- the Cavenders Greek seasoning compliments it beautifully. Cavenders seasoning is available in most good grocery stores. I am cutting down on salt intake but feel free to add salt if you like.
I came up with this as an alternative to Mexican scramled egg wraps that I have tried. This recipe is packed full of veggies! If you find the veggie-egg ratio too heavy on the vegetables, just add more eggs! I use small (lite) wraps so this often makes 6 smaller wraps but if you use larger wraps it makes 4. Thanks to a review, here is a suggestion if using a convection oven- cook for 40 minutes total, the first 15 mins at 350F and thereafter turn it up to 400F.
I lived in Paris for 4 months and in Valladolid, Spain for 6 months as a student and in both cities, the traditional everyday breakfast was this (although some adults have black coffee rather than chocolate milk!). In Spain I lived with a local family and everyone had a variation of this breakfast each day. It really hits the spot and with some fruit it is a well-balanced breakfast. This is a great way for kids to have fun learning about other parts of the world and works well with a class of schoolchildren. I haven't specified amounts for the toppings as that's all down to personal taste.
I made this smoothie, trying to copy a store-bought kind and this is so much better! The fresh pineapple gives it such a light, fresh flavour- it's just not the same with canned pineapple.
If any of this smoothie makes it to the fridge, you may like to water it down with some pineapple juice as the coconut milk thickens as it cools.

The figures may be different between countries, but by British Weight Watchers, this whole recipe is a total of 9 1/2 points.
This is a fresh, light meal that is great for the warmer times of year. The sauce is not thick or heavy but coats the pasta for an even flavour. The choice of herbs here is merely what I have found to work well but please adjust to your family's tastes! The herbs should be fresh though- dried herbs will not give the same result. The fresh basil really brings out the flavours in this dish. UPDATE: In light of a review, I have tried this dish again and increased the liquid ingredients in the recipe to provide more sauce. It is important in this recipe to include the stock cube as there is something in it that thickens the sauce. If you must leave it out, add an alternative thickening agent.
