Zaar Contest Entries

Recipes I created expressly for Zaar contests. The most memorable of these was my first contest recipe. I created Grand Marnier Carrot Cake on my forty-fifth birthday as a special treat for myself. And so that the family could have their cake! My Fluffy Banana Graham Pancakes was one of the RSC #12 Winners! Also for about forty minutes Not Yo' Momma's Porcupines actually held first place position in the first-ever Dining on a Dime Contest! But my favorite creation is the one I could not stop eating. Yep. I went back for thirds and then fourths of Chopped Salad with Smoky Thousand Island Dressing (lol)

Recipe #413696

I love jicama dipped in creamy vegetable dip, and thought Why Not just make the crispy jicama part of the creamy dip? It is So Good this way and couldn't be easier. Serve the dip with fresh veggie spears or spread on crackers. Oh Yum!

Recipe #384245

Plate up a palette of pretty colours. Rich orange grilled salmon, raspberry red borscht sauce, bright white crème fraiche, deep green dill sprigs. A dish that will delight your taste buds as well as your eyes. Lovely served with fresh steamed haricots verts and lemon rice. The recipe makes 8 servings. But do not worry if you are cooking for 2 or 4. Any unused borscht sauce is easily thinned to soup consistency and very flavourful the next day. Enjoy your borscht again hot or as a beautiful cold summer soup!

Chicken, veggies, and rice noodles stir-fried in a yummy peanut sauce -- Quick, easy, and oh so tasty!! This is a great dish created for and almost entered in the RSC #9 contest. I guess it is the one that got away.

Recipe #330092

A thick icy cold milkshake with just the right blend of chocolate and coffee flavors. We found it surprisingly similar to a Wendy's Frosty. Plan to freeze a few coffee ice cubes in advance. I created this diabetic-friendly recipe with "light" and "sugar-free" ingredients for RSC #12. The shake can also be made using "regular" versions of the ingredients. We like it best that way!

Recipe #317933

A creamy & refreshing summertime dessert you are sure to enjoy! It would be lovely served at a bridal shower. Individual servings are very pretty presented with whipped cream and a little pineapple ice cream topping. While creating this RSC #12 Contest entry, my objective was to come up with something like an orange creamsicle only made with the combination of pineapple and vanilla flavors. Frozen Pineapple Dream was the deliciously addicting result. I kept this dessert tightly covered in the freezer and ready to serve at a moment's notice. That way we had many opportunities to enjoy the recipe!

Recipe #317922

You won't believe how simple it is to make your own delicious restaurant-quality egg rolls! HINTS: Cutting very small pieces of pork tenderloin is quick and easy when the meat is partially frozen. Or leave the pork out for vegetarian egg rolls. Commercially prepared shoestring or matchstick carrots along with coleslaw mix may be used to really speed things up! Created expressly for RSC #9.

Recipe #211509

Tantalize your taste-buds with these tender sweet buns! The orange-apricot filling which spirals through them bursts with abundant flavor and a nutty gooey glaze adds the final decadent touch -- Mmmm! -- I happily created these sticky buns for the Ready Set Cook #9 Contest.

These oh so tasty buttermilk pancakes are filled with diced bananas and griddled until golden brown. We enjoyed them with butter and maple syrup. You could serve them lightly dusted with powdered sugar then topped with whipped cream and banana slices. This recipe is simple, quick, and one you will want to make again and again! I created it expressly for RSC #12 after being inspired by some awesome banana macadamia nut pancakes enjoyed during a recent visit to Kauai.

Recipe #317843

Delicious nuances of bright orange flavor grace this wonderfully moist carrot cake and luscious cream cheese frosting. Its taste and texture compare with what I've tried at fancy resorts and so I decided to give the cake a more fitting name. Grand Marnier Carrot Cake was originally called Sunshine Day Carrot Cake. The recipe was created expressly by me for the RSC #9 Contest.
