    Recipe courtesy Giada De Laurentiis, show: Everyday Italian, Episode: Vegetarian Italian, this has gotten rave reviews on FoodNetwork. Easy and so delicious, great for a quick dinner and your vegetarian guest will love it! This would also be great for busy college students.I have added a few more spices to the mix. Great served with whole wheat pasta or/and garlic bread, or try it over creamy polenta! Add more cheese and sauce if you like.

    I was doing some research on Eggplant Parmesan and came across this little goody. All the crispy goodness of traditional Eggplant Parmesan, only in bite size snack form. It's a traditional Friulian dish that the great Lidia Bastianich first made for me".     I know this sounds strange, and I haven't tried it yet, but the reviews are so good, I must try it and posting here for safekeeping. Bal Arneson from Spice Goddess on the Cooking Channel is the creator. You can make these vegan by substituting Earth balance butter for the butter, one tablespoon flaxseed meal mixed with 3 T water(see Recipe #395664) for the egg and vegan chocolate chips.

    All the spices make this a special dish with delicious flavors! From Bal Arneson - The Spice Goddess on the cooking channel. The stew can be eaten alone or with rice and it tastes perfectly spiced both ways. The fresh roasted coriander and the addition of oranges makes this a surprisingly light stew compared to the heavier texture and feel of traditional Indian Rajma/Chhole dishes.

    Michael Simon says this dish is inspired by his mom, so of course it is Greek! Michael likes to leave the skin on the carrots because they really pick up the char well when the sugar in the carrots superheats in the pan. Dressing the carrots while they are hot allows them to soak up some of the vinaigrette. This works as an appetizer on it's own or as a side to roasted lamb or grilled fish.
