This is a weight watchers recipe I've been using for years though I modify it slightly to acccomodate our tastes...sometimes substituting Mexican style egg beaters for the regular and also omitting mushrooms and adding more hot sauce. What I love about this is that the cups can be made ahead and frozen and simply reheated when needed. (remove foil cups first.) This is the original recipe which states it's a one point serving. Experiment with your own favorite cheeses and vegetables. Can also be served as an appetizer or snack.
I based this recipe off kzbhansen's recipe #130244. While these are a huge hit with the family, with over 30 g of fat they don't really fit into the healthier lifestyle we are aiming for. This lighter version checks in at only 3 WW points. The vegetables can be exchanged however you like with minimal impact on the points value. I suggest trying mushrooms, peppers or tomatoes in the empanadas.
My friend emailed this recipe to me as a quick, easy, no eggs/no milk dessert. It doesn't have to be for breakfast at all. The original recipe called for Cherry filling, but I prefer to use Blackberry filling. I changed the name to "Berry" because you could use any you wish. Enjoy!
1 1/2 cups per serving, for a 3 point serving. Serve with a tossed salad (points not included). Also good for OAMC - freeze before baking. It looks impressive, too. I like it for luncheons with the gals or for dinner.
Very quick, easy way to start your day, especially with the nutrients in this recipe. The blueberries and walnuts are real brain food, so give this a shot next time you don't have time to eat breakfast.( I know I've said it before, I hate measuring. You can ignore these measures and just eye out your own yummy creation, change the fruit, change the nuts, whatever goes!)
These muffins are a blessing for people restricted to low-fat foods, there is only about 1 gram of fat in each muffin, these muffins do not at all taste low-fat! This recipe will make 36 muffins, so just pop them into the freezer for a fat-free snack or for breakfast! If desired add in chopped nuts although that will add to the fat content, You can use egg beaters in place of eggs and white sugar in place of brown or use half of each.
Less than 1 gram of fat in each muffin but you wouldn't even know they are low-fat, these are even better the next day, and are just as delicious without the berries, of coarse you can use full-fat sour cream or yogurt, flavored yogurts only add to the taste of these muffins, I like to sprinkle a sugar/cinnamon mixture on top of each muffin before baking but that is optional, see note on bottom for doubling the recipe. For greasing see recipe#78579 --- visit www.kittencalskitchen.com for more low fat recipes!
This is a delicious lower fat bar if using reduced-fat peanut butter, these are perfect for kid's lunch boxes, feel free to add in some chopped nuts or sunflower seeds or coconut in place of the raisins,
