This recipe is my verison I made different from regular recipe I found. Just a bit more taste to it and fat intake in mine. Serve with mash potatoes of choice and a green vegetable dish and your choice of bread. Of course you can use less fat products for those watching the calories. This meal is really good.

The green chiles you;ll find in squat little cans in the Mexican aisle of your supermarket are extremely mild, as they are usually seedless Anaheim peppers. If you prefer a little more spice with your eggs, substitue a jalapeno or two - fresh or canned - for the green chiles.

This recipe came from a magazine. I have tweaked it a little to make it healthier. It's 6 points for 2 cups in the weight watchers points system. Great for those winter nights and football game Sunday! I use the crock pot and it makes 4 quarts (2 cups per serving, 8 servings).
This is a recipe from my 2008 Weight Watchers cookbook that we really enjoyed. I altered it slightly for our taste. It's a nice way to enjoy broccoli without all the cheese sauce. It's got a nice bite to it too. Feel free to leave out the crushed red pepper flakes. The frozen steam bags of broccoli work well with this recipe.

This is actually Recipe #238239 altered for vegetarians. When I first altered it, I was still a meat eater, and liked the original version, but then got with my vegetarian boyfriend. We both loved the meat free version. And now of course, I'm meatless too. This is one of our favorite dishes, and is easy to make.
