You can find Spelt flour at most stores that sell bulk grains or at health food stores. The amount of water you add will determine the thickness of your end product, from a pancake to a crepe. They work well as a wrap or cut into wedges and toasted in the oven, it makes great chips for a humus dip. You can change the spices to fit your taste. For a little variety, try adding a little brown sugar or honey instead of the onions, oregano and garlic. Just remember, you'll be eating what the Roman Legions ate as their dietary staple!
These quick 'n easy quesadillas are perfect for the late night snacker with discriminating tastes, or the bachelor/ette cooking for one. (though multiples are entirely possible - cooking them simultaneously will surely take balancing!). When cut into smaller wedges, these are also ideal as appetizers, and can be served between warm and room temperature. (*a plus to serve on St. Patty's day, as all the ingredients are GREEN!)

I just one first prize in a contest sponsored by http://www.igourmet.com for the best pizza recipe. I have to say I am SO excited! The requirements were to use at least one ingredient that they carry -- I used five, the 2 cheeses, pepperoni, peppers and tomato puree can all be found on their website. I think the combination of flavors will speak for itself.
NB There was a wrong amount for the mace in the recipe - It said 1 tsp. It is now corrected to the correct amount of 1/4 tsp.
Easy Tasty appetizer. Can be a "Do ahead" recipe. If you wish you can
make this as a side dish for dinner just double the size of the
crepes. The crepes as appetizers should be apprx 6" across. The recipe
may be cut in half or doubled. Make a large batch of crepes they
freeze really well. Just layer them with wax paper between each and
wrap well in plastic . Then you will have them on hand for any easy
appetizer - Enjoy!
