WW friendly. A family favorite especially when atoning for excesses. This is so tasty, yet so healthy, even when each adult eats two large burritos. I adapted this from a recipe on a plastic produce bag at a Mars Supermarket.

    Recipe #296755

    Select
Caponata from Loni Kuhn's S.f. Cooking Class

This is the potluck/picnic dish people demand I make late summer. You don't need to like eggplant to love this! Amazingly, it is served at room temperature, and keeps for 3 weeks in the refrigerator. I have been carrying this recipe with me since 1977 from the May issue of Bon Appetit, and each time I move, the panic doesn't leave until I locate this recipe again! Rita posted a canning version of this recipe, if you want to enjoy this year-round: Recipe #462221 #462221.

MDM's favorite for ladies' luncheons, judging from the chutney stains. From the Alexandria VA TWIG cookbook, "A Heritage of Good Tastes", submitted by Mrs. Donald Burchell.

    Recipe #325002

Lighter Mini Spring Rolls With Lighter Plum Sauce
    Handle

Entered for safe-keeping for healthier appetizers. From Evelyn Tribole's "More Healthy Homestyle Cooking". The (vegan) plum sauce has been published on Zaar on its own as Recipe #347267 #347267. Vegetarians can consider substituting TVP crumbles for the ground turkey breast.

    Recipe #350628

    Select
    Spinach-Filled Anatolian Flatbread or Wrap
    Handle

Entered for safe-keeping for ZWT. From Ghillie Basan's "Classic Turkish Cooking." You can roll freshly made wraps in foil and keep warm for at least 30 minutes. The flatbreads can be folded over a filling and baked, like a quesadilla. Another option: cook a bigger batch of flatbreads without filling them, piling them on a large sheet of foil and wrapping them to reheat later for serving instead of pita with dips.
