Adapted from Woman's Day magazine. I changed all of the ingredients to lower fat versions, but the original called for the full fat stuff, so by all means use whichever you prefer. Good way to use up a little leftover corn and chicken. If you prefer to not buy pre-bagged salad, just add a little shredded red cabbage,carrots, and sliced radishes to your favorite salad greens. You may also sub any type of cooked beans you prefer - chickpeas, kidney beans, black-eyed peas, etc. Shredded leftover pork or turkey would also be nice in this.

Spicy and Colorful. Wonderful cold or warm and wilted. I prefer the soft, creamy texture of the boiled potatoes, however, roasting them for a bit of crunch would be fabulous, I'm certain. This is great with baked fish or you can even stir in some store-bought rotisserie chicken for a quick, complete meal.

I have made this many times over the years for large gatherings, everyone loves it and I am always asked for the recipe --- the dressing is wonderful with potatoes or cooked pasta, you may of coarse double the amounts to feed more people --- all ingredients may be adjusted to suit taste, throw in some cooked ham or bacon if desired, plan ahead this salad must chill for at least 3 or more hours before serving, the longer chilling time the better! --- if making the potato salad and prefer a creamier salad then double the dressing amount

I made this the other day for a get-together of old friends. It got rave reviews from them, so I thought I'd post it here for others to enjoy. That, and so I don't forget what I did. :D If desired, you could serve it wrapped in a flour tortilla. Chopping the roast is much easier when using the pulse setting on a food-processor. The Mexican Dressing amounts are approximate...increase or decrease the salsa to taste.
