I am a retired caterer. I have used this recipe for many years. Everyone I have served it too seems to just love it and always come back for seconds. Its one of the simplest and easiest fried chicken recipes you will ever prepare. The Ritz cracker crumbs were used many years ago as a last minute substitute for saltines. I think this was a one of my best substitutes ever. Needless to say I never used saltines again. I hope you enjoy!

    Recipe #206235

I have been using this Fine Cooking recipe/technique with chicken and LOVE it! Created by Joseph Verde. He says, 'start planning this dish a day ahead so that you can marinate it overnight. I like to serve the crisp chicken with a side of silky mashed potatoes as a foil'.

    Recipe #337728

Gourmet 12/06. This can be an appetizer or main dish.

    Recipe #341547

From Every Day with Rachael Ray December-January 2009. The chicken could be done OAMC.

    Recipe #341558

This dish is so simple, yet when you eat it, you feel like a gourmet chef! Anyone you serve it to will feel the same!

    Recipe #343588

This is a very wonderful and tasty chicken and rice dish, everything is cooked in one skillet, so it is quite easy to make.

If you like feta cheese, you'll like this. Another winner from FC.

    Recipe #51887

A stuffed chicken breast where the sweetness of the sun-dried tomatoes harmonizes with the saltiness of the Feta cheese.

Here's a slow cooker version of the great Spanish dish Arroz con Pollo. This tasty one dish meal is popular with everyone. Serve with a green salad and hot crusty bread, and pass the hot pepper sauce for those who like heat.

Sun dried tomatoes create a flavorful depth to the creamy sauce on this easy chicken dish. You can add or subtract to the red pepper flakes making it perfect for your own tastes. This takes only minutes to make.

My friend, Beth, in Ellicott City, MD sent this to me years ago when I asked her for some of her good recipes. (At least I think she sent me this one!) It's easy and different.

    Recipe #138250

This is my favorite after-a-hard-day-at-the-office meal. Throw the stuff in the oven, get the veggies started, and then relax! Read a book, or play with the kids. We all know we've earned it, right?

    Recipe #47410

I love Outback's Alice Springs Chicken and Applebee's Smoothered Chicken, so I sorta created my own version of it. You can use fat-free dressing with this and there is NO difference in the taste (just less fat!) and you can use canned mushrooms when fresh aren't on hand. Also if in a tight bind, you can use can/jarred bacon bits (the real ones not Bacos) instead of the actual bacon slices. I prefer applewood smoked bacon cooked fresh.

This would go great with garlic mashed potatoes and steamed veggies.

I know there are a ton of Tso's Chicken (pronounced by the cook as "sho"). This one is exactly like the Tso's at Evergreen, the restaurant I frequent. This makes lots of sticky sauce, just great for going over rice. They are closed on Mondays, so if I'm craving Chinese, I have to make it at home, which is always better.

    Recipe #153953

This casserole has the potatoes and chicken baked together in one dish, smothered in the most wonderful-tasting cheese sauce...a favorite supper at our house....if you don't have any cooked chicken, this can be made with cooked turkey or cubed cooked ham, or even cooked shrimp, any way that you choose to make it this is a real winner.

    Recipe #78184

Marinating the chicken in the sour cream or yogurt, and lemon makes this chicken very tender, and very delicious, this is an outstanding chicken recipe. It is important that only dry breadcrumbs be used for this recipe, otherwise the coating will become soggy. (tip: remove your breadcrumbs a day ahead, and spread them on a cookie sheet overnight to dry). Note: plan ahead, the chicken needs to marinate in the fridge overnight.
