I found this recipe several years ago in a magazine alongside an ad for either soup or noodles. It sounded good, I tried it, my kids LOVED it and now I cook it for dinner about every other week. It's super-fast and very yummy!

    easy and tasty quesadillas

    Recipe #226650

Fast and healthy? one dish meal that's also a kid pleaser at my house. I usually use left over salmon, which makes it even faster. If you don't have left over salmon, you can either use some smoked salmon (will have to adjust seasonings since it is salty), or bake some while you cook the pasta (season with olive oil, minced garlic, salt and pepper and bake at 350 degrees F until it flakes easily with fork). You could also sub the broccoli with other veggies like frozen peas (just skip the boiling and add straight into the sauce) or asparagus (cut it into 1" pieces and boil until crisp-tender). Any type of pasta will work, penne or corkscrews, which are easier to toss but in a pinch even spaghetti will work. Another sugguestion is to add fresh snipped chives for more flavor at the end of cooking.

Adapted from Ellie Krieger's recipe--delicious salmon cakes, much like crab cakes, with a bit of oriental flare.

A wonderful way to use leftover roasted salmon! Serve roasted salmon in the beginning of the week, making enough to have leftovers. Then a few days later, serve this delicious meal! Adapted from Quick Fix Meals with Robin Miller,Method's of Heat.

Really good weeknight fare. Kids will enjoy!

This recipe comes from the Colorado Cache Cookbook, my all time favorite. This recipe is my son's favorite mexican dish and he requests it every birthday. We all love it! Cook and prep time does not include cooking the chicken. I usually use leftover chicken.

I have a friend who swears by this dish. I haven't tried it yet, but it sounds so good I will soon! Easy too!

This is a really quick way to make potpies and tastes great. the crust is flaky and tastes like homemade. I like a lot of veggies in mine, but you can reduce the veggies, or increase the meat if you like.

Sometimes a whole turkey or chicken is too much of a good thing - here's a delicious way to use up the leftovers. Homey, wonderful, comforting.

This is a combo of my Chicken Pot Pie filling and my mother in-law's Biscuit Style Crust. They go together fabulously. This is awesome with a double crust, but if you are watching your fat intake, it is also yummy with just a top crust. Also, the homemade gravy is wonderful, but if you have leftover gravy or prefer to use canned or jarred, this is even easier. Enjoy!

Tortilla soup as it should be.....trust me, everyone loves this....and it's from the Houston Jr. League "Stop and Smell the Rosemary".

    Recipe #85800

This soup makes a great meal on a cold winter night. Just add a salad and some hot crusty french bread. This also makes a first course for dinner. I like to make this when I have left over baked chicken. If using as a first course or appetizer servings would be for 4. If using as a main dish servings would be for 2
