This is the light version of the oh so fabulous, but oh so fattening Southwestern Eggrolls from Chili's Restaurant and Grill. Now I feel better:-)

I made this for the first time recently and it will be a staple for us on the CORE program. Use your imagination because there are many combinations that would also be delicious. So simple and delicious!
Very easy and delicious side dish; goes well with the WW Sauteed Shrimp. ZERO POINTS!
*Note - recipe calls for 1 medium or 1 large squash and zucchini - all depends on your preference. I use large myself.
