This recipe is from a Weight Watchers meeting. It is so quick -- I ate it daily when I was on maternity leave with my second son. If I am making it for the week, I just empty the cans into a plastic container and warm up 1 serving in the microwave. I have also made it using frozen corn and mixed vegetables.

These look almost as good as they taste. But they are NOT McDonald's fries. At half a gram of fat per serving (versus 16 grams for the same amount of the fried variety) you can munch away guiltlessly. From Fabulous Fat-Free Cooking. To cut down baking time, you can microwave the scrubbed potatoes for 7 minutes, turning them 4 times for even cooking. Wet the potatoes and bake at 350 degrees for 30 minutes, or until tender. After you've scooped out the potato flesh, save it for another use, such as mashed potatoes or potato pancakes.
