A recipe that goes back years and a great way to use up all that zucchini left over from summers crop, you may adjust all seasonings to taste --- if you are a garlic lover then you may increase to 1 teaspoon, I also add in a pinch of cayenne pepper for a little heat --- use only dry breadcrumbs for this --- if your seasoned breadcrumbs already have salt added then omit the 1/4 teaspoon salt --- as one reviewer mentioned that she dipped the sticks into Ranch dressing so you might want to give that a try using a low fat dressing or dip :)

I found this recipe in a cookbook given to me for Christmas called "Irish Cooking". The casserole is really simple to make, and it has an almost quiche-like texture to it. The original recipe called for regular cottage cheese, but we actually had FAT FREE on hand. I don't think it took away from the flavor of the dish at all. Had this in TEXAS a couple of years ago! My SIL Kathie turned me on to it! Sushi without the fish, Nori, and trouble of making it! OK she just had the soy but darn the pickeled ginger is so good! This is so quick and easy!!!!! It'll satisfy that I WANT SUSHI need! I myself can eat one a day!
