A easy casserole to put together.

    Recipe #179184

This is my wife's favorite 'take along' recipe for pot luck type dinners.

This is a low carb alternative to fried tomatoes that is easy to make and tastes great. Good for the unripe tomatoes that fall off the vine before it's time (you know when you weed and knock them off)or the end of the harvest. I did make with red too and they came out just as good. The green are firm and tangy and the red are soft and sweet. A nice side, place in a sandwich or top pasta. Oh and great on a pizza! But there goes the carb watching! Take note that the fat in the marinade is not all used so the calculations are off.

    Simply delicious casserole.

The amount listed will serve about 3-4 people although my DH and DS could eat this dish by themselves lol! you can double this recipe if desired, white button mushrooms can be replace for the portabellos. This dish will have you clammering for more, and it tastes even better the following day, but I doubt if there will be any leftovers lol! Use as much portabello mushrooms or button mushooms and cheeses as desired for this recipe, I don't bother measuring. This can be served as a side dish or a main dish, it's a pretty filling dish especially if you use portabello mushrooms!

A wonderful side dish that I make as soon as the yellow squash start coming in. When I first started making this about 30 years ago, I used the bacon grease. I found I like the margarine better and I like the squash to cook so that you have a few browned pieces in. Oooohh, that gives it so much flavor!

Great way to prepare hash browns. This makes a lot so it is perfect to take to a potluck or family get-together.

Company worthy potatoes and really easy to put together.

A great appetizer with an awesome presentation. Garlic lovers may want to increase the amount of garlic. Enjoy!

Had this dish at the Blue Mesa Grill in Addison, TX...some of the best Southwestern food I have eaten...Steaming is the secret to its success, however, this is adapted for oven-baked and very close to the original.

Had this dish at the Blue Mesa Grill in Addison, TX...some of the best Southwestern food I have eaten...NOTE: I typed in sushi ginger as one of the ingredients, but Recipezaar keeps changing it to pickled ginger...must be the same thing.

Form Olive Garden. I haven't made these yet, but I think I will try it without the sauce. Update: I made these tonight and was going to make the sauce, but didn't have time. I had to substitue Italian bread crumbs for the croutons and I added chopped mushrooms stems. I also sprinkled with lemon juice after they were cooked and it was wonderful! I also used portobello and regular mushrooms-both were good!

A great way to use up the fresh tomatoes from your garden! This dish can be served as an appetizer with warm Italian bread or along side a sandwich. --NOTE-- Cooking times is actually the chilling time for this recipe.

If desired you can also sprinkle some garlic powder over the potatoes with the salt and pepper and adjust all amounts to taste.

This is an adopted recipe from the Great Adoption of Feb 2005. Finally tried it out on 23 March 2009. This is a seriously good recipe.

This may be served hot as a casserole or reduce the melted butter amount down to 2 tablespoons and serve as a cold potato salad, either way it's delicious! --- If you are serving hot as a casserole I strongly recommend to have the potatoes cooled to room temperature before using in this recipe or use cold potatoes that have been cooked a day ahead, I have even made this using about 5 cups of thawed frozen hash browns, the complete casserole may be assembled and refrigerated for up to 2 days ahead before baking although it's so delicious cold it might not even make it to the oven, and also makes a large amount which makes this *perfect* dish for potlucks --- if you are baking as a casserole use only mayonnaise such as Hellman's using salad dressing will not be as good.
