This is really delish! I have never seen cranberry vinegar but I used raspberry vinegar and it worked just fine. It's a very good holiday side dish that you may blend to a smooth puree or leave a bit on the chunky side as you prefer.

    Recipe #196371

Its Valentine's Day & I'm serving this for the first time! Its from "Party Dish, Romantic Dinner For Two". Unfortunately, my beet slices are smaller than my cookie cutter so I've shaped the hearts "free-hand".

    Recipe #110112

This is very easy and fast soup, especially when u wanna eat or there is so hot outside that u don't wanna eat any hot meal. So try it and u will be surprised;) By the way, this soup is straight from Europe, Lithuania country:)

Although the vibrant pink color of this Middle Eastern dip is startling, the flavor is superb. There are many versions. Sometimes the beets are puréed and blended into the yogurt; other times, they are simply sliced or cubed; still other times, a little tahini is blended in for a deeper, richer flavor. In this recipe, the beets are simply grated with the shredding disk of a food processor, then folded into thick, creamy yogurt. Serve as a dip or an accompaniment to fish. Cook time includes chilling time.

A piquant recipe for those who like beets. Not much work at all to prepare.

    Recipe #112044

This relish adds a little zip to your roast beef.

I have been looking for a wonderful borscht recipe and this one looks delightful! From Cooking Live.

    Recipe #62583

You can leave out the beets and add kiwi if desired.

    Recipe #132792

I cut this salad recipe out of a weekly local newspaper the other day and haven't had the chance to test it. I would like to try golden beets for the red beets. If you cannot find mache (lamb's lettuce), substitute butter lettuce or fresh mixed greens. Serve with crusty French bread!

Every Easter my Mom would make this potato salad. This is not exactly hers but my version. Don't wait for Easter make it for your next picnic! Do use new potatoes if you like them firm but I myself like my potatoes soft so I find myself using russets, and if you don't want a precise cut salad with firm potatoes use russet. I find myself rough cutting the russets potatoes because they do fall apart and add to the creaminess of the dressing. FYI-You can toss the cubed, cooked, still warm, potatoes with the vinegar or beet juice and let set till cool even up to over night. Then add remaining ingredients.

    Support your local beetroot pusher.

Since I make this for dinner parties this is a double recipe, if you are serving a very large dinner party you might want to double and serve it in two bowls, or you may reduce by half if desired, the mustard powder is only optional I always like to add in for an extra kick, 1 teaspoon onion powder is also great to add also --- this makes a wonderful addition to a holiday dinner :)

This is meant to be eaten with plain white rice. No one ever believes me but as soon as they try it they are hooked. My DH loves it. Last time I was lazy and I made it with canned ingredients it was almost as good.

I just love baked BEETS! Being Red one of the things I like to serve on Valentines Day!

    Recipe #53351

Cooking time is actually the chilling time. This can be made up to two days before serving.

    Recipe #119981

Mmm mmmm, this oft overlooked vegetable is delightful, prepared like this, to accompany grilled or barbecued beef or lamb. Try it.

    Recipe #66174

We usually ate it for lunch on a Friday so that we wouldn't be too stuffed for the Shabbat meal. It's light and tasty especially with rye bread. Agreed, you have to like beetroots to enjoy the salad (and I do). Prep. time does not include chilling

    Recipe #104132

This came from LCBO's Food and Drink magazine (Winter 2005). It's bright and colourful and very good. You could substitute canned beets in a pinch, but the roasted beets have a better taste and texture.

    Recipe #109298

I got this recipe from my sister, but have changed it to suit us. Great as a side dish for beef, lamb, or oven roasted salmon. Good vegan dish too. You can discard the garlic, or squeeze it over the vegetables as we do.

    Recipe #102215

This Dutch recipe is my favorite pork salad. If you don't like beets, omit the beet. I don't bother to peel the tomato.
