    Veggies: Too Much Zucchini!

[Cover photo by Barb Gertz.] Oh-oh, your garden is birthing new zucchinis so fast that dozens at a time are practically popping off the vine. Your neighbors have started to hide when they see you coming to bestow yet another kindly gift of your harvest upon them. So what ARE you going to do with all your zucchini bounty (yellow squash, too)? (For zucchini CAKES, though, see my cookbook Cakes Made with Vegetables ! Also, for stuffed zucchini, see my cookbook Stuff It! (zucchini/summer squash) , which is sorted by type of vegetable.)

One of my mother's favorites for when she was rushed and wanted a vegetable side dish that was quick, simple and tasty. She didn't measure the soy sauce, just sprinkled it with the plastic "sprinkling top" (I don't know what else to call it) on the bottle, so I'm just guessing at the amount. These days, I use light (lower-sodium) soy sauce. If you like, jazz it up with the herb of your choice, but I like it just as is. (Occasionally I sprinkle with my favorite herb thyme.)

Just when you thought you had enough zucchini recipes. This one comes from the Monks at Mepkin Abbey in So.Carolina. They grow their own chickens and sell the eggs to make a little extra. (The eggs are delicious!!)

    Recipe #31606

Tasty, quick and easy side dish.

This dish is so easy yet so satisfying! The stuffing mix adds a nice crunch to it along with the right spices. Only 6 ingredients make up this delicious recipe! A great way to use up your zucchini crop.

    Recipe #181151

A good side dish and gives the squash a new twist! The original recipe calls for bacon or bacon drippings. You may substitute chicken bouillon cubes instead.

    Recipe #42061

This recipe came from the back of a saltine cracker box. It's an absolutely wonderful blend of flavors and makes a nutritious and satisfying side dish. My vegetable shy family ate it up. Nice as leftovers too!

    Recipe #68037

From Mediterranean Dishes. Use only the best zucchini available. Do not prepare out of season!

I saw Giada De Laurentis of Everyday Italian on the Food Network make this the other day and it looks wonderful. I just bought the ingredients today and can't wait to make it.

Chef Felix4067 found this recipe on the Nabisco website in response to my request. I tweaked it just a bit. Sounds weird but give it a try.

I'm not a huge fan of zucchini, but like everyone else, I seem to end up with an abundance of them from the garden. I found this recipe on another site (can't remember which one) and I really enjoy it, though I can't say its all that healthy. Gotta love the cheese!

Too much zucchini? Try this wonderful relish and enjoy your zucchini year round. It is really good on hotdogs or hamburgers. The yield is a guess, as I always at least double this recipe.

    Recipe #71659

I tried it and absolutely love it! I love Zucchini and this is one of the best ways I've have it! I even use it in my veggie lasagna!

Fritters are very popular in the Middle East. They are eaten hot or at room temperature as a vegetable side dish or a meze. It couldn’t be simpler to make, but you can dress it up with optional garnishes of black olives, tomatoes, or hard-boiled egg. The perfect use for small, sweet new zucchini. Serve alone or with a creamy garlic-lemon yogurt sauce for a perfect complement to any spicy or grilled foods that call for a cooling accompaniment.
