    Snow peas need so little cooking, and I hate worrying about taking them off the stove in time when steaming, especially when I have guests over. I tried microwaving them tonight for the first time and think I'm on to something!

    Nobody in my family, except me, likes black eyed peas. I learned a easy way to dress them up from my grandfather many years ago. May sound a little strange until you try it, but this recipe is addicting! I have made them with low fat mayo, and they were good. I have never tried fat free mayo. This recipe works very well with field peas too. You could easily add to this basic recipe to make all kinds of black eyed pea dishes.

    So here is the story behind me and mushy peas. I love peas, but I don't like mushy peas (like the kind that come out of a can mushy, not like this recipe mushy), so when I read about mushy peas and fish and chips, my curiosity was piqued -- the description sounded good. So of course I went in search of a recipe. I have no looked back! This is so good! I eat it when we have real fish and chips and when we have grilled fish and sweet potato chips! It is also a great side for pork chops or potroast in place of the mashed potatoes! I found this on sometime back in 2008. Very good!

    This is nice twist on the common creamed peas and potatoes. It is lighter and fresher, but there are a few key ingredients. To me using these ingredients really makes this dish. First, I like to use red potatoes, they hold together better than russet or yukon gold; frozen baby peas (nothing canned); proscuitto right from your grocers deli (boiled or baked ham just doesn't the same taste); fresh parsley to give it that fresh taste; olive oil (not butter); and good parm (no green can). And by buying the proscuitto right from your grocers deli vs pre-packaged you are buying only what you need which saves money. Garnish with good olive oil, parmesan, and fresh ground black pepper makes this a great side dish. My favorite is to serve this with grilled steak, but it is a nice compliment to any recipe.

    So Simple! White rice, peas, onion, heavy cream, good cheese, fresh thyme (is a must), salt and pepper. The secret is the heavy cream, cheese and lots of fresh ground black pepper. Now, I even make it easier and use a couple of "boil in bag" rice - but, use whatever kind you want. This just makes a creamy nice side dish. It is my sons favorite and he asks for it all the time. I have even used that "leftover carton" from chinese take-out for this dish too. It is easy quick but really good.

    Sounds weird, tastes great. This is actually a combination of two Company's Coming Barbeque recipes -- "Peas With Bacon" and "Peas and Mushrooms." Now why on earth shouldn't it be "Peas, Mushrooms, and Bacon?!" This is actually a tin-foil packet dish for the grill, but my husband came home from work not feeling well, so since he's the barbeque-er, I had to improvise and use my cast iron skillet instead. Works either way!
