this is a recipe i never thought i would like. but i LOVE it! it is so easy to make. sometimes i serve it over pasta, sometimes not. it's up to you. i have added meat to my spaghetti sauce before, but that really isn't necessary either because the eggplant is a meat substitute.
The story behind this dish is that the Imam (a Turkish official in the Ottoman Empire) fainted when his wife told him she'd used up all the olive oil in making this dish. Eggplant is an oil sponge, it loves to soak it up. Having said that, it is also very, very delicious, and if you allow the eggplant to drain well after frying them, you will still cut calories while retaining great taste. Great dish - vegetarian.
Eaten either hot or at room temperature, this is one of those simple, but ultimately satisfying dishes that goes with almost anything and is so good eaten on its own.
Adapted from The Splendid Table, by Lynne Rossetto Kasper. This doubles easily.
This week was the first time I had eaten eggplant. I had no idea how to cook it, and even came on *zaar looking for recipes, but couldn't find a simple throw-together recipe that was low fat and still good. So i just came up with my own.
You can slice and salt the eggplant ahead, but the baking method significantly reduces the amount of oil they will absorb. This is a great first course, and goes well on the side of meat or fish. Courtesy Claudine.
