    Served at the 5 Star PIERO'S Italian Restaurant in Las Vegas! This is the original recipe for the most delicious creamed corn (not sweet) you'll ever taste. Given to me by the kind executive chef of Piero's, Las Vegas. The recipe is so incredibly simple but the taste is out of this world. Not at all sticky sweet or mushy like canned cream corn, rather barely sweet, but just enough to make you know you are eating something very special. You can't go wrong with this dish.     I can't for the life of me remember where this recipe came from but I have been making these for about 30 years now. Everyone absolutely loves them. I nearly always double or triple the recipe because we love them as snacks or in our lunch the next day. Go by the recipe and don't add any extra salt as there is enough in the cheese and crackers. Enjoy! P.S. 8-7-09 I have been making this for over 30 yrs. and have never had a problem with watery zucchini. Might just be a climate issue.

    A farmer friend of ours taught me the way to freeze sweet corn and enjoy it like it was just picked in the middle of the winter. It's very simple and all you need is freezer room, ziploc bags and water!!!!!! He would drop off a large sack of corn to us when it was in season and we would have it all winter. I have tried freezing corn every which way and it always tastes 'soggy'. This way keeps the corn incredibly crisp!!! Enjoy!!

    Corn already seasoned so this is very easy to take for a picnic.No need to bring butter or salt. Just keep corn on ice till ready to cook because the sugar will turn to starch if it sits around. More reason to buy fresh as possible. Can be doubled or cut in half. Feel free to change the herbs.
