I'm not a big fan of peas, but like them IN things. This salad is one of my favorites. Happy to share!

Note: You could certainly use fresh broccoli if you have it, but I usually have a frozen bag on hand and it works great. This is an easy and delicious recipe to make when you have an overload of garden-fresh cucumbers, I use cherry tomatoes sliced in half since I have an abundance of them from my garden, and I use wine vinegar for this but regular white vinegar will do just fine! You might prefer a sweeter dressing so adjust the sugar and vinegar to taste. I have even added in some small broccoli and/or cauliflower florets to this.

This is the BEST way to eat a sweet potato. We have baked sweet potatoes with our steaks instead of Idaho potatoes. It's a nice complement to chicken and beef - or any other meat that I can think of! This can also be made on the grill or tossed in the coals if you are camping!
