I visited a Whole Foods store in Conn. recently and tried their Masala rice and it was so good(the rice and the sauce were mixed together), I wanted to recreate the recipe at home. Not finding it in the Whole Foods site, I came across this recipe by Bobby Flay. The recipe for the Masala sauce came with the recipe for Basmati Pilaf with Peas, but I'm posting it separately. From Bobby Flay's Throwdown with Bobby Flay, Episode: Chicken Tikka Masala.

Have you ever tried the golden sesame tofu from Whole Foods? Yum. Here is a copycat recipe that may even be better. The secret here is the cornstarch, it gives the tofu its chewy coating, but you have to sprinkle it over the tofu evenly and with a light hand; otherwise it’ll get gloppy(using a wire mesh works well). You’ll find toasted sesame oil and mirin(or you can sub rice wine vinegar) in the Asian sections of well-stocked supermarkets. Adapted from Dianacooks. Thanks Diana!

    Recipe #464582

The roasted garlic adds a richness to the smoky heat of the chipotle peppers in this hearty(and yummy!) soup. It improves as the flavors delvelop, so go ahead and make it a day or two ahead! Adapted from Fields of Greens cookbook.

Jim Lahey from NYC's Sullivan Street Bakery, says an 8-year-old could do it. It's simple, artisan, crusty, chewy, a little salty... does it get any better? Prep time does not include 14 - 20 hours rising time.

From Fresh from the Vegetarian Slow Cooker, this recipe is a guideline to slow cook basic dried beans such as pintos, kidneys, white beans, and black eyed peas. If you wish to flavour the beans, add the onion, garlic, and bay leaves, else leave them as is; just cook them in water and you will have beans that are ready to use in any recipe calling for cooked beans. Cook time does not include the overnight soak.

Earl's Restaurant in Canada makes the most amazing Kung Pao - it's on their menu as chicken, but I had it made vegetarian, and wow, is it fantastic! Make it however you like... at Earl's, you order by the number of peppers... 1 for mild, 6 for scorching... I like 6! *Note* The peppers are not eaten, they're cooked in the sauce, and then removed. Passed along to my by a friend who I ate there with... she mentions that if you cannot find the peppers, you can sub them with 2 tsp chili paste and 1 1/2 tsp chili flakes (to taste.)

Mom's well known for her cherry pie. Years ago, she told me not to tell the secret... but I know the secret's out, so here it is! The beautiful thing is that it has only four ingredients - plus the pastry, of course. Mom's cherry pie puts any boughten cherry pie to shame - you won't be able to even look at one again! For a vegan version, use soy or almond milk to brush pie. Oh, and the secret? Almond extract!

Great alternative to General Tso's Chicken. Contributed to a vegetarian website by Sarah Booth.

Just like the name suggests...a simple sauce to make but a pleasure to eat. This recipe comes from Giada De Laurentis...Everyday Italian. Update Sept. 07--bay leaves appeared in the directions, but not ingredients. Fixed now!!!

    Recipe #369299

Wow is this good and so easy! You could easily add a can of drained and rinsed black beans to make a fabulous vegan meal. I left out the mint and loved it. The recipe says feel free to make this a day ahead of time, as it refrigerates well. Recipe originally from Cooking Light July 2009.

Great on vegetarian black bean and corn tacos!!! I was making a recipe calling for salsa only to find NONE in the house. That being said, I combined a few different salsa recipes based upon what was in my pantry and came up with this. It totally fit the bill for us!

    Recipe #423298

This is a copycat recipe from PF Chang's China Bistro. It's my favorite dish there, and while my dining room lacks the ambiance...this dish is still excellent at home!

    Recipe #400949

This is the "Toasted Coconut Cupcakes" recipe from Vegan Cupcakes Take Over The World. I just made them and they are delicious! The recipe below uses shortening whereas the original recipe calls for coconut oil. If you want to use a full can of coconut milk, just double the recipe. Enjoy!

    Recipe #336203

Not only does Inn Serendipity feature hearty vegetarian breakfasts (and bedside cordials in the evening), but the owners try to meet any special dietary needs, especially those of vegans. Their vegan cocoa pancakes are among the recipes most requested by vegans and nonvegans alike. Makes 18 to 20 pancakes. Published in Vegetarian Times, May 2005
