My husband and father-in-law are nuts for migas. I first had them when visiting San Antonio and must say they are very good. I think they are usually served for breakfast but we eat them for dinner. Posted 9-16-04
I saw this on a holiday episode of 30-Minute Meals with Rachael Ray, and it looked like the most absolutely easiest and elegant nibbles to set out for your holiday guests. Will definitely not ruin their appetites.
This is about as simple as it gets -- I couldn't find a fast and easy sweet-and-sour type marinade for my tofu, so I threw a few things together and hoped for the best. The measurements are forgiving; alter to your tastes. I used Mori-nu Firm Lite tofu, and using the measurements I listed, the recipe yield has about 130 calories.
This is great if you like the taste of fondue, but don't have a fondue pot! Very tasty appetizer. If you want to give this some more zing, just add about 1/8 t. of your favorite dried spice (dill, basil, oregano, cayenne, garlic, etc.) to the cheese mixture.
The flavour combination of Brie, mushrooms and rosemary is amazing. This dish is a wonderful appetizer for a dinner party, or just served by itself as a little something. It is from 'Canada's Wine Country Cookbook' and pairs really well with a Dry Riesling (white wine)
From the February/March 2002 issue of Light & Tasty magazine. And a tiny dash of ground nutmeg as a mysterious "secret" ingredient. Try adding pre-cooked chicken or veggies (cooked asparagus, broccoli, roasted red peppers, cooked mushrooms) for something different. Also, maybe substitute some of the cottage cheese for cream cheese or sour cream. Whole wheat fettucine will also add slightly more fiber.
This is a white dipping sauce served in many restaurants with chips or hot flour tortillas for dipping. This is a basic recipe that uses '"jack" for the Tex-Mex version and chihuahua and/or asadero for the more traditional Mexican version.
I like this lentil soup because it includes a couple of veggies too. The red lentils are specified in the recipe because they are smaller, rounder, and they do not have the seed coat of brown lentils. However, you can substitute brown lentils if necessary. I just love the spices in this! This is a long list of ingredients, but it involves very little effort. You should be able to have it on the table in an hour or so.
