I found this recipe on the internet somewhere, but have tweaked it a bit. Eggplant is one of my favorite vegetables, but I haven't found all that many recipes where it is allowed to take center stage; it is usually buried under so many other ingredients and flavors. This recipe is also a nice way to use up left-over pesto. Preparation time is mainly standing time for the eggplant as it drains its bitter juices.
Tastes like enchiladas! Yummy and healthier than regular enchiladas. Adapted from Sunset. *This has become my most popular recipe posted here. I've made it slightly different ways over the years. I sprinkle the oiled eggplant with garlic salt now. It's also great with a can of diced tomatoes and 1tbsp of tomato paste, extra cumin, garlic, dried onions, salt and cilantro. I also use reduced-fat cheese now. If you would like it spicier add some jalapenos. I love to eat it along an undressed salad of romaine, purple cabbage and grape tomatoes and eat bites of the salad and eggplant together with sour cream. Many people think it needs to be heartier so feel free to add beans, ground beef or chicken but I really don't think it needs it. It's also great served with rice.
This is coming from a Woman's Day magazine. Let me just say this is an explosion of flavors. My DH said it was "Screamin'" which is his highest praise. I didn't care for the chickpeas or the feta, but if you like those things it's spectacular! Oh yeah and super duper quick!
Prepare this salad a few hours in advance to allow the flavours to blend and mellow. You may use other fresh herbs instead of dill or just more parsley if you like. You may leave out the tuna if serving as a side dish with meat. I like the fresh flavour of this salad. It keeps well in the fridge for a couple of days.
This light and flavorful recipe was created for RSC#11. The vegetables with the melted gouda make for a light appetizer or snack. These are wonderful eaten plain or with salsa. Special Note: Make sure you use enough cheese and melt it around the nuts and beans so they don't fall out, toppings let you control how much zip it has :)
Here's my favorite way to use up left-over mashed potatoes. If your mashed potatoes are flavored with garlic, onions, etc. it's all the better. Measurements are approximate since I usually throw this together to use up leftovers in the fridge. If my potatoes are plain, I have been known to add a little chicken bouillon to give them more flavor. Serving size may vary- my two year-old DD and I share one of these for lunch. This definitely is not a "diet" meal, but, it's delicious!
"Meaty" vegetarian balls. Try taking them to a Pot-Luck dinner and watch the suprised faces when the diners find out there's no meat in them. Also great in spaghetti sauce or meatball Stroganoff. 1/25/07 Editor's Note: PETA has a list of vegan products, and Lipton Onion Soup Mix is vegan. www.petaworld.com/accvegan.asp
