    I formerly ate only fish or seafood, but now currently eat poultry as well... yet I do still love strictly vegetarian fare. I would like to share my favorites with all of you! And, if you see something using chicken broth, just sub veggie broth...

    A refreshing change from the usual pasta salads... I like to make this a day ahead so the flavors have time to really meld together. Makes a great light and cool vegetarian lunch! Cook time is approximate for cooking of pasta.

    This recipe comes from The Diabetic Cookbook. It can be easily adapted for any occassion or season. The variety of fruit and berries can be endless. I have often added grilled chicken or shrimp to make a complete meal. Hope you enjoy!

    I have no idea where the title for this recipe came from... it's a very tasty no-mayo cole slaw and goes well with just about everything. The celery salt and dry mustard make it just a little different.

    I can eat almost half of this recipe at a time. Not only is it delicious, but a very attractive dish; the onions take on a purplish color from the wine, which contrasts nicely with the bright green broccoli and black olives. I cook broccoli with a very light hand, so these directions are for somewhat "rare" broccoli... if you like it more done, cook for about 10-15 minutes instead of five.

    I like veggie dishes where the flavor of the vegetable comes through and isn't masked by heavy sauces, and this really fits the bill. The luscious crumb crust is VERY garlicky and the dish goes well with a simple entree and salad.

    A Provencal-style recipe from one of my favorite French chefs, Patricia Wells. I love the little bite of the hot peppers! Try them over grilled food, in sandwiches, mixed into pasta... the flavored oil adds a lot to sauteeing, too. Absolutely delicious!

    From the cookbook Mediterranean Light by Martha Rose Shulman. Martha compares this soup more closely to an Indian curry unlike its milder European cousin. I sometimes substitute lamb stock for the water which gives the soup even more richness. If you choose to use lamb stock you'll probably want a soothing cup of mint tea later. Harissa is prepared easily and cheaply at home and there are several good recipes for it on this site.

    I don't believe I ever saw "ravioli in broth" as an appetizer until I dined in LaSalle County, IL. This is a wonderfully rich-flavored recipe, and not for the "wine-faint-of-heart". It makes an elegant beginning for a special dinner; the flavors are complex and I would suggest a simple entree to follow; perfectly grilled fish or chicken would be ideal.

    This is wonderful! I saw it being put together yesterday morning on our local Fox Morning news. It is from the Wisconsin Milk Marketing Board. I made it exactly as listed (except for some salt) and now I'll figure out how to make it easier on the budget. I felt like I was eating "fine dining" off my paper plate! YUM-Yum!

    These are the beans my French-Canadian mother used to make. She never measured anything making these so I've estimated the amounts. These taste great with fresh bread. A good dish to keep in mind for pot-lucks. You can add pork or weiners to it if you like. Bacon strips on top work well.

    From the Hot & Spicy & Meatless cookbook with a few changes. It's called 'recycled' because there always seems to be leftover peppers and scallions in the frig, and this is a good way to use them up. If you don't like things too spicy feel free to omit the chilies, or at least seed them first. If you love spicy (like me) add a little extra.
